Recipe - Steak Fajitas

INGREDIENTS:

1 1/4 pounds of skirt or flank steak

2 limes, quartered

1 large sweet or yellow onion, diced

2 bell peppers (yellow, red, orange) seeded and sliced

1 clove of garlic, minced

1 Tomato, diced

1 can of black beans

1 avocado, seeded and sliced

1 bunch of cilantro, chopped

1 teaspoon of cumin

1 teaspoon of garlic powder

1 teaspoon of chili powder

1 teaspoon of onion powder

1 teaspoon of smoked paprika

kosher salt (to taste)

ground pepper (to taste)

olive oil

Optional - Sweet potato or flour or corn tortillas

DIRECTIONS:

  1. Place a cast iron skillet or saute pan on medium high heat and add 1 tablespoon of olive oil.(If using set potato place in microwave and cook according to your microwave directions.)

  2. In a bowl, combine spices and season the steak saving around half to season peppers and onions.

  3. Season peppers and onions with remaining spice mixture and add to heated skillet along with garlic. Turn occasionally and cook until charred and tender about 6-8 minutes then remove and set aside.

  4. Add steak to the pan and cook 5-6 minutes on one side and flip and cook 3-4 or until desired temp on the other.Let rest 3 -5 minutes before slicing.

  5. If using tortilla shells heat for according to directions. I like 15 secs each side.

  6. Fill sweet potato or shells with peppers and onions, steak, beans, tomatoes, and avocado or eat stand alone. Enjoy!
